Then, in the winery - after careful picking of the grapes by hand - the full value of the skins is extracted thanks to long but attentively controlled maceration.

After the malolactic fermentation, the wine is stored in stainless steel tanks in order to keep its varietal characteristics to the fore. Once the wine is in bottle, these varietal components continue to blend and harmonize together, yielding a wine with lively, well-structured fruit and a broad, attractive style.

We recommend matching this wine with the varied traditional dishes that this land of exciting flavors has to offer: Zirtari Rosso is particularly delicious with grilled meats and roasts of all kinds. It is also excellent with traditional Sicilian full-flavored pasta dishes, or with mature cheeses.
